Chia seeds are the secret to refined sugar free fruity jam.
When mixed with wet ingredients, they go jelly like. This means that when combined with warm, juicy fruit, you have a quick, easy and healthy jam. They are also very nutritious, and packed with omega 3.
I’ve gone for a gorgeous apricot and thyme combination but this method works with many different fruit - try peaches and nectarines, any berries, or even plums.
Enjoy spread on toast, on yogurt bowls or porridge, or even use as the jam layer of a sandwich cake like Victoria sponge.
You’ll need (makes 1 jar):
400g apricots
few sprigs of thyme (about 1 tsp picked leaves)
2 tbsp chia seeds
Halve the apricots and remove the stones. Add them to a microwaveable bowl with the thyme.
Microwave for 4-5 minutes until completely soft and collapsed.
Mix well and mash with a fork. Add the chia seeds and mix well.
It will continue to thicken up over the next 10 minutes, but can be used straight away if you don’t want to wait.
Transfer to a jar and store in the fridge. Use within a week.
