10 minute stove top breakfast crumble
Soft, spiced apple chunks are topped with a crunchy oat, seed and hazelnut topping. The epitome of dessert for breakfast.
I love crumble, it’s such comfort food in autumn and winter, so why not enjoy it for breakfast? This healthy, gut friendly breakfast version takes just 10-15 minutes to make on the hob.
While you soften the apples in a pan, you toast the oats, nuts and seeds in another pan. Toasting them gives them a gorgeous deep flavour. Add a little butter and maple syrup and that’s your crumble topping.
Enjoy with yogurt for a seriously tasty breakfast. Alternatively this would make a lovely light, healthy dessert.
Note: I didn’t add any sugar to the apples, but I used eating apples. If using cooking apples, you might want to add a little as they are more tart. The softness of the cooked apple will also depend on the type of apple you’re using, but whatever the result it will be tasty!
You’ll need (per portion):
2 apples
1/2 tsp cinnamon
30g oats
10g mixed seeds
10g hazelnuts (or nuts of choice), roughly chopped
Small knob of butter
1 tbsp maple syrup
Chop the apple into bite-sized chunks and discard the core. Add to a saucepan with 150ml water, the cinnamon and a little pinch of salt (trust me, it makes the apple sweeter!). Cook on a medium heat for 10 minutes.
While the apple softens, toast the oats, seeds and nuts in a dry frying pan for a few minutes, until changing colour and you can smell them toasting.
Turn off the heat, add the butter and maple syrup and mix well.
Serve the apple with the crumble mix on top and finish with yogurt. Dig in.
