Carrot, chickpea & orange salad with halloumi
With crunchy almonds & a zesty orange & smoked paprika dressing
This salad has it all - it’s sweet and smoky from the orange and paprika, it’s fresh and wholesome from the chickpeas and veg, its crunchy from the almonds, and salty halloumi makes a great topping and means it’s high in protein (over 30g per portion).
Apart from the halloumi, there’s no cooking involved here either.
