Here we have an iconic cauliflower recipe in soup form. It’s so comforting - like a hug in a bowl.
You only need 4 ingredients, and it’s so easy to make. I like to use the cauliflower stalk and leaves too to avoid waste.
If you want to make it go further and add some bean-y goodness, a tin of butter of cannellini beans would be good blitzed in too, and would probably stretch this recipe to feed 4 (add half a pint more stock too).
