Celeriac, pear & blue cheese salad
With crispy chickpeas and fresh, peppery rocket. One of my favourite winter salads.
Celeriac has to win the prize for the ugliest vegetable, and it’s also a bit of a mystery to lots of people, who don’t know what to do with it. But don’t take it at face value, because when roasted it has such a beautiful flavour - sweet, nutty and with a hint of celery.
It’s key to this wholesome, hearty recipe, which is one of my favourite winter salad combinations. I say salad, but is it really a salad? I don’t know, but this is the kind of salad I eat as a main in winter, as it’s filling, tasty and comforting.
