Chocolate & pistachio granola
With mashed banana for sweetness. Healthy, low sugar and so easy.
Making your own granola is great because you can play around with the flavour combinations and you know exactly what’s in it - no preservatives or highly processed ingredients.
My gut loving granola was so popular I thought I’d try another flavour option. Chocolate and pistachio are such a winning flavour combo, so I wasn’t surprised when this turned out so well.
I use mashed banana which acts to bind it together and make clusters without the need for lots of oil or sugar.
Cocoa gives it a deep, dark chocolate flavour, but if you want to make it a bit more indulgent, you could add some dark chocolate chunks at the end.
Store in an air tight container and use within a week or so.
Enjoy with yogurt or just as a healthy snack.
You’ll need (makes 6-8 portions):
1 large or 2 small bananas
150g oats
2 tbsp olive oil (or another oil)
1-2 tbsp syrup of choice (maple, honey, date syrup)
2 tbsp cocoa powder
Pinch of salt
50g pistachios, roughly chopped
Preheat oven to 180C.
In a large mixing bowl, add the bananas and mash them. Add the oats, olive oil syrup, cocoa powder, and a pinch of salt. Mix well.
Add the pistachios and mix again.
Line a large flat baking tray with baking parchment. Tip the granola out onto the baking parchment, spread it out evenly and as thinly as possible, pressing it down with a wooden spoon, so you’ve got one large even layer.
Bake for 15 minutes, remove from the oven and then leave to cool completely before breaking into clusters. Store in an airtight container.
