Courgette couscous bowl with crispy grated halloumi

A courgette and couscous salad is mixed with a simple tahini dressing, then finished with the crispy grated halloumi and pickled red onions. This is the ultimate summer salad - it’s fresh, crunchy, healthy.
This meal is pretty quick to make, about 15-20 mins, and there’s no cooking involved apart from frying the halloumi.
You’ll need (per portion):
60g couscous, dried weight, I used wholegrain
1 courgette
Handful of rocket leaves
1/2 block of halloumi (about 100g)
Pickled red onions
For the dressing:
1 heaped tbsp tahini
1 heaped tbsp greek yogurt
Juice of 1/2 a lemon
1 small garlic clove, finely chopped or grated
1-2 tbsp water
Boil a kettle. Put the couscous in a small bowl with a good pinch of salt. Pour over enough hot water to cover plus about 1cm. Leave to sit.
Make the dressing by mixing all off the ingredients together. Season with salt and pepper.
Finely slice the courgettes and add them to a large bowl with the rocket, couscous and dressing. Mix well. Taste and add more salt and pepper to taste (don’t go overboard, the halloumi is salty).
Grate the halloumi and add to a hot frying pan. Stir and fry until it’s golden and crispy. It will go wet before crisping up! Keep going.
Serve the salad topped with the crispy halloumi and finish with picked red onions. Dig in!
