This is one of those recipes that’s almost too quick and easy to taste that good.
It features harissa paste and jarred roasted peppers and which are such cupboard heroes for adding loads of flavour to quick meals.
I like to fry the gnocchi instead of boil it - it goes golden and crispy which is really tasty, plus it means this is a one-pan meal.
Enjoy!
You’ll need (per portion):
1 tbsp oil
200g gnocchi
1 jarred red pepper (about 150g)
1 heaped tbsp harissa paste
50g crème fraiche
Parmesan, optional
Heat the oil in a frying pan. Add the gnocchi and cook over a medium-high heat for a few minutes, turning regularly, until it turns golden and crispy.
While it’s cooking, chop the red pepper into small pieces.
Too the pan, add the harissa paste, red pepper, crème fraiche and a good pinch of salt and pepper. Add a couple of tablespoons of water and stir gently until well mixed. Heat through for a minute or so.
Serve and finish with a grating of Parmesan cheese (if you like). Dig in.
