Who doesn’t have a bag of peas in their freezer at all times?! They are such a good option when you don’t have much fresh veg in the house.
Here they are cooked, drained and crushed with soft cream cheese, mint leaves, lemon zest, a little lemon juice, salt and pepper.
Serve on sourdough toast for a fresh, crunchy, seriously quick and easy vegetarian lunch or snack.
You’ll need (serves 1-2 depending on appetite):
160g peas
40g soft cream cheese
Half a lemon
Couple of stalks of mint, leaves removed and chopped
Sourdough or bread of choice, toasted
Cook the peas and drain them. In a bowl, mix the peas with the cream cheese, zest of half a lemon, the mint leaves, flakey sea salt and black pepper. Squeeze in a little lemon juice. Mix, crushing the peas with a back of a fork. Taste and add more lemon juice/seasoning to taste.
Serve on the toast. Dig in.
