I think cottage cheese bowls might become an obsession over summer. Aside from being really fresh and tasty, this meal packs 35g+ protein, so will keep you full for ages, and there’s no cooking involved.
I always keep soy/edamame beans in my freezer. Some need to be cooked - if so boil for a couple of minutes. If not, pour boiling water over them to defrost. Go with what the packet says!

You’ll need (per portion):
250-300g cottage cheese
125g cherry tomatoes, quartered
1/3 cucumber, diced
80g soy/edamame beans
Chilli crisp oil
Toasted bread, to serve (optional)
Add the cottage cheese to a bowl or plate and spread it out.
Top with the tomatoes, cucumber and edamame beans.
Season with salt and pepper.
Spoon over a couple of tablespoons of chilli crisp oil.
Dig in.
This was such a delicious lunch! I agree this is going to become a summer staple for me. I used the Woolf’s Kitchen chilli crunch (Ocado). Would recommend! Looking forward to making many more bowls like this.
