Edamame 'pesto'

A tasty, high protein sandwich addition

Edamame (or soya) beans are a freezer staple for me. They are great for adding plant protein to many dishes (they pack in 13g protein per 100g), and I love their flavour.

Here I transformed them into a chunky Asian-inspired pesto with coriander, lime, peanuts and sesame oil.

This would make a great dip, but I enjoyed it inside a sandwich with smoked tofu which I fried until golden then added soy sauce, sesame seeds, and a little honey to the pan at the end. I also included Kewpie mayo (any mayonnaise will work) and some shredded red cabbage for crunch.
