Grated halloumi tacos
These halloumi tacos are so easy and tasty. The halloumi is grated and fried with the wrap on top, then they are finished with a fresh lime slaw and hot honey.
It’s been a while since I grated and fried halloumi… but I’m back with a corker.
The halloumi is fried in a pan with the tortilla wrap on top. All that’s left to do is top it with the slaw which is fresh, zesty and crunchy, as well as avocado and hot honey (don’t worry, alternative suggested if you don’t have any).
These are quick and easy, and I promise once you make them they will become a regular.
You’ll need (makes 4, to serve 2):
1 carrot
Red cabbage
3 spring onions
1 lime
1 block of halloumi, approx 220g
4 tortilla wraps (or 6 if very small)
1 avocado, scooped out of skin and sliced
Coriander
Hot honey (or honey and chilli flakes)
Julienne or cut the carrot into thin matchsticks (or grate it). Very finely slice the red cabbage until you have about a handful. Finely slice the spring onions.
Mix all of the above in a bowl with a little salt and squeeze in the juice of the lime. Mix and set aside.
Grate the halloumi, holding it tight to stop it crumbling too much. Heat a good non-stick pan and add a little oil. Transfer a quarter of the halloumi to one side of the pan, making a pile a little smaller than the size of your wraps. Do the same on the other side.
Top each halloumi pile with a wrap and press down fairly hard. Fry for a few minutes then use a spatula to get underneath the halloumi and lift it up and see if it’s golden. Once it is, flip over, cook for a minute or so then remove from the pan. Repeat with the other two wraps.
Top each taco with slices of avocado, some of the slaw, a little coriander, then finish with a drizzle of hot honey.
