Gut loving granola
Banana, tahini and mixed seeds are mixed with oats to make tasty granola clusters with 8 different plants in.
The best thing you can do for your gut health is to eat a variety of plants. This granola has 8 in, and when served with fruit(s) and nut butter, easily hits 10, which is a third of the weekly target of 30 plants a week. What a way to start the day.
It’s really quick to make. Once you’ve mixed the ingredients in a bowl, it takes just 10 minutes to bake, and works especially well in an air fryer (don’t worry if you don’t have one, just preheat your oven first, and it might take a few more minutes to cook).
Most of the sweetness comes from banana, alongside a little maple syrup/honey, which gives a lovely flavour and helps to bind the granola together, leaving you with tasty clusters. Mixed seeds add crunch, flavour and up the plant count. The mix I used has 4 different seeds in (pumpkin, sunflower, linseed, hemp) but you could mix them up if you want - you could use one or two of them if you have them individually, and could add in nuts instead/as well as, just try and keep the ratios about the same.
Enjoy with thick Greek yogurt/skyr, nut butter and fruit for a really tasty breakfast that’s high in protein and plants (can also be vegan if using a plant based yogurt and maple syrup instead of honey).
This is best eaten within a few days, and should be stored in an air tight container.
You’ll need (serves 3-4)
1 large ripe banana
25g tahini
25g maple syrup/honey
100g oats
50g mixed seeds
1 tsp cinnamon
pinch of sea salt
In a mixing bowl, peel and mash the banana with a fork. Add in the tahini, maple syrup and mix. Add the dry ingredient and mix well until evenly combined.
Line a baking tray/your air fryer basket with a little baking paper, and spread out the granola evenly. Cook at 190C for roughly 10 minutes, until turning golden brown.
Remove and leave to cool a little, before breaking into clusters of your desired size.
Serve with the yogurt, fruit and I like to add nut butter too (I went for cashew!).
