Lemon drizzle pancake stack
My favourite cake turned into a tower of pancakes. These are drenched in a lovely lemony syrup.
There are two dilemmas when it comes to pancake day: crepes or a stack of thick, fluffy pancakes, and what toppings to have.
With crepes, I honestly think you can’t beat lemon and sugar, but I really do love a stack of pancakes. So here I’ve made a tower of thick, fluffy pancakes with a very lemony sugar syrup which is spooned in between each layer.
They are perfect, because I find the problem with pancake stacks is that the pancakes at the bottom/in the middle are always a bit dry and plain - there’s never enough topping/sauce to cut through the whole stack. Spooning some of the syrup on top of each pancake means they are all soaked in that delicious sweet, sour, zesty sauce. Then the remaining syrup gets poured over the top at the end, to ensure they are suitably drenched in it.
