This pea and mint whipped feta is incredibly fresh and tasty, easy to make and uses a freezer hero - frozen peas!
I made it to spread on toast and serve alongside a wholesome chunky lentil soup.
You could use it as a dip for crudités or crisps at summer barbecues or picnics, or spread it inside sandwiches with some crunchy lettuce or rocket, or enjoy alongside toast like it did. Enjoy.
For the dip:
100g feta cheese
150g cooked and cooled peas
Small handful mint leaves
Juice of half a lemon
Extra virgin olive oil
Add the feta, peas, mint and lemon juice to a blender. Add a pinch of salt and pepper and a little olive oil. Blend until smooth, adding more oil/water as needed - you want it to be a hummus like consistency.
Use however you like, as a dip, spread on toast, in sandwiches…
