Quick picked red onions
Making your own couldn’t be easier - add a few ingredients to a jar and shake. These will elevate so many dishes - add to anything and everything (well, almost everything).
There aren’t many dishes that aren’t made better by topping with pickled red onions… they add a huge hit of flavour and colour. I love them.
They are so easy to make! I always have a jar in the fridge ready to use in sandwiches, on eggs for breakfast, on smashed avocado toast, on salad/rice bowls, in tacos - so many options.
Here’s a quick, easy, no cook recipe. It’s as easy as adding everything to a jar and shaking. They are ready to eat in about 15 minutes, then get even better with a little more time.
You’ll need (makes 1 jar):
1 red onion, finely sliced
1/2 cup red wine vinegar
1 tbsp granulated or caster sugar
1 tsp salt
3/4 cup water
Optional bay leaves, black pepper corn, chilli
Add the red onion to a jar. Add the vinegar, sugar, salt and water.
If you like, add a couple of bay leaves and a few peppercorns.
Pop the lid on and give it a good shake.
Leave to sit for 15 mins or so then you can use them. They will be even better after an hour or 2. Store in the fridge and use within a couple of weeks.
