Smashed bean, feta and avocado sandwich filling
A really tasty vegetarian sandwich filling - it’s creamy, herby and fresh (and no cooking involved!).
Does anyone else find it hard to think of exciting meat-free sandwich fillings? As creative as I am with food, I don’t find it easy to think of good vegetarian sandwich options… but this one was a winner.
It’s fresh, creamy, wholesome and couldn’t be easier to make - add all the ingredients to a bowl, smash together with a fork and stuff inside your bread.
It’s also a really gut healthy option, with 6 different plants packed into it, and lots of fibre from the beans.
I used a mix of three herbs. Don’t worry if you don’t have all three, I’ve listed five below, use as many of them as you have. Even if you just have one, I’m sure it will still taste lovely.
For a vegan version, you could swap the feta for 2-3 tbsp of tahini and you’ll have an equally tasty result (might need a little more salt).
You’ll need (serves 2):
1 tin of cannellini beans (or any white beans, I.e butter beans or haricot)
1 avocado
60g feta cheese
handful of fresh chopped herbs - I went for a mix of parsley, dill and chives. Mint and basil will work well too.
juice of 1 lemon
bread of choice
Drain the beans and add them to a bowl. Halve the avocado, remove the seed and scoop out the flesh and add it to the bowl. Crumble in the feta.
Finely chop the herbs. Add them to the bowl with the lemon juice. Season with salt and pepper.
Use a fork to mash it all together, and keep mashing/mixing until it’s well combined.
Serve inside your bread of choice as a sandwich, alternatively serve on toast.
