Sweet potato, halloumi & harissa fritters
A 5 ingredient, 15 minute meal with cheesy, sweet and slightly spicy flavours and a fresh, creamy harissa yogurt sauce.
I love fritters! They are so versatile and easy. In this recipe, sweet potato is mixed with grated halloumi and spicy harissa paste.
They couldn’t be easier to make, and only take about 15 minutes to whip up. While they fry, make the sauce which is just yogurt and harissa paste.
These are great eaten for any meal. I love them as a brunch (you could top with a fried egg too, and perhaps avocado), or make them for a quick vegetarian lunch or light dinner.

You’ll need (per portion):
200g sweet potato, grated
1/2 block halloumi (approx 100g), grated
75g plain flour
2-3 tbsp harissa paste
3 heaped tbsp Greek or natural yogurt
Parsley, optional, to serve
In a large bowl mix the grated sweet potato, halloumi and 1-2 tbsp of harissa paste, depending how hot you like things. Sieve in the flour, season with salt and pepper and mix until completely combined.
Heat a frying pan to a medium-hot temperature with a little olive or vegetable oil.
Use your hand and grab a small handful of the sweet potato mix and form into a patty shape. Add to the pan. Repeat, the mix should make 3-4 fritters. Flatten them with a spatula until they are about 1cm thick, so they cook evenly and have a flat surface to cook in the pan.
Fry for a few minutes before flipping over and repeating on the other side.
While they fry, make the yoghurt sauce by mixing the yoghurt with a teaspoon of harissa paste.
Serve the fritters with the harissa yogurt on top, and finish with parsley if you like.
