Tandoori halloumi burgers
With mint and coriander yogurt and mango chutney. Genuinely one of the tastiest halloumi recipes I’ve ever made.
This is the second recipe from my halloumi series, and genuinely of the tastiest recipes I’ve made with halloumi (and I’ve made a lot).
It’s so easy to make - the halloumi is fried in a tandoori masala spice mix and served inside a bun with mango chutney and a simple mint and coriander yogurt.
I promise this will become a regular recipe! It’s so quick and tasty. Serve with chips or potato wedges.
You’ll need (serves 2):
Small handful mint leaves
Small handful coriander leaves
60g thick Greek yogurt (or mayonnaise)
1 block of halloumi (approx 220g)
1 tbsp tandoori masala spice mix
2 burger buns, I like sesame brioche buns
Crunchy lettuce leaves, I.e romainne or little gem
Mango chutney
In a small bowl, add the yogurt and tear in the mint and coriander leaves. Mix and set aside.
Cut the halloumi into 2, so each piece is half as thick as the original block, but with the same surface area. Then cut each half so it’s half as thick again, so you have 4 slices.
Add to a frying pan with a little oil and cook for a minute or so on each side. Add a little more oil to the pan and then the tandoori masala spice. Move the halloumi slices around/turn them over so they are coated in the spice. Cook for a couple of minutes on both side until you can really smell the spices.
Spread a layer of the yogurt on bottom piece of bun. Top with a few lettuce leaves, then 2 slices of halloumi.
Spread mango chutney on the underneath of the bun lid. Place it on top of the halloumi to finish your burger, and dig in.
