I told you cottage cheese bowls might become my new summer obsession! Here’s another one, this time a fruity breakfast recipe.
Warm, juicy cherries with creamy cottage cheese, topped with a toasted oat and flaked almonds mixture for crunch and a deep nutty flavour. It’s got Bakewell tart vibes, and a lovely mix of sweet, creamy, crunchy and nutty.
This has over 30g of protein and makes a really tasty balanced breakfast - because it’s low in sugar and high in protein, it won’t spike your blood sugar and will keep you full for longer.
You’ll need (per portion):
80-100g fresh or frozen cherries, I used morello
30g oats
20g flaked almonds
Small knob of butter
250-300g cottage cheese
Drizzle of honey (optional)
Heat a frying pan (don’t add any oil) and add the oats and almonds. Toast them (moving them about regularly) until they change colour and smell toasted. Add the butter and mix well then turn off the heat.
Warm the cherries in a heatproof bowl in the microwave (60 seconds if using fresh, 90 seconds if frozen).
In a serving bowl, add the cottage cheese. Top with the cherries and all their juice too. Add the toasted oats and nuts.
Finish with a drizzle of honey over the top and I like to add a pinch of flakey sea salt too (trust me). Dig in.

I think cottage cheese bowls might become an obsession over summer. Aside from being really fresh and tasty, this meal packs 35g+ protein, so will keep you full for ages, and there’s no cooking involved.
